Ingredients

Scale

Meat Prep Essentials

  • 2 lbs ground chuck (80/20) or a mix of ground chuck and cubed stew beef
  • Salt and freshly ground black pepper

Signature Seasoning Blend

  • 1 tbsp chili powder
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp cayenne pepper (adjust to taste)

Pantry Staples

  • 1 large yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • One 14.5 oz can diced tomatoes (fire-roasted if available)
  • One 15-oz can of tomato sauce
  • 1 cup beef broth (low sodium recommended)
  • 1 tbsp olive or avocado oil (for browning)
  • Optional: 1 tsp brown sugar

Instructions

  • Pat the meat dry and season with salt and pepper.
  • Brown half the meat in hot oil, then remove it, and repeat with the second half.
  • Sauté the onion in the same pot until translucent. Add garlic and tomato paste, and cook until fragrant.
  • Return all meat to the pot, sprinkle with pre-mixed spices, and stir to toast.
  • Add diced tomatoes, tomato sauce, and beef broth. Simmer uncovered for 60–75 minutes, stirring occasionally, until the chili is thick and the beef is tender.
  • Let rest covered for 10 minutes before serving.

Notes

Pat the meat dry for the best browning and flavor. Simmer gently to avoid tough beef. This chili is even better the next day and freezes well for meal prep. Adjust cayenne or add jalapeño for extra heat if desired.
