Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup grated Parmesan cheese (preferably aged)

For the Marinade

  • 1 cup plain Greek yogurt (or low-fat sour cream as an alternative)
  • 1 tablespoon lemon juice
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • 1 clove garlic, minced

Pantry Staples

  • Olive oil (for pan-frying)
  • Unsalted butter (for the finishing sauce)
  • All-purpose flour (for dredging before Parmesan coating)
  • Chicken broth (¼ cup for the finishing sauce)
  • Heavy cream (¼ cup, optional, for extra richness)

Instructions

  • Remove marinated chicken from the fridge and let it sit at room temperature for 15 minutes.
  • Pat off excess marinade and dredge each chicken breast lightly in all-purpose flour.
  • Press grated Parmesan onto both sides of each chicken breast that has been floured.
  • Preheat the oven to 400°F (200°C). Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side.
  • Transfer the skillet to the oven and bake for 15–18 minutes, until the internal temperature reaches 165°F at the thickest part.
  • Rest chicken, tented with foil, for 5 minutes before serving.

Notes

Marinating is key to achieving both flavor and tenderness. Use a thermometer for juicy results. For extra crunch, add more Parmesan. Store leftovers in an airtight container and reheat them in the oven or air fryer for optimal texture.
