Brussels Sprouts Prep:

  • ½ teaspoon crushed red chili flakes  
  • ¼ teaspoon garlic powder  
  • Salt to taste

Crisping Agents:  

  • 1 tablespoon avocado oil or any high-smoke-point oil  
  • 1 tablespoon cornstarch

Pantry Must-Haves (optional for flavor tweaking):  

  • Black pepper  
  • Lime juice  
  • Maple syrup (as a honey substitute if needed)

  • Toasted sesame seeds

Instructions

  • Trim the stem ends and remove any wilted outer leaves from the Brussels sprouts. Then, cut them in half (or quarter them if they are large).  
  • Pat the Brussels sprouts dry thoroughly and let air-dry on a towel for at least 10 minutes.  
  • Preheat oven to 425°F (218°C) for 10–15 minutes.  
  • In a bowl, toss the sprouts with avocado oil, cornstarch, salt, and black pepper until they are evenly coated.  
  • Let coated sprouts sit for 5 minutes.  
  • Line a baking sheet with parchment paper or a silicone mat.  
  • Arrange sprouts cut-side down, leaving space between each.  
  • Roast in the middle/lower third of the oven for 18–22 minutes.  
  • Mix together honey, melted coconut oil, soy sauce or tamari, chili flakes, garlic powder, and salt for the glaze.  
  • At the 10-minute mark, drizzle glaze evenly over sprouts.  
  • Gently shake the pan or use tongs to flip the sprouts.  
  • Continue roasting until deeply browned and crispy.  
  • Remove from the oven and let rest on the pan for 3–4 minutes before serving.  
  • Add desired toppings, such as sesame seeds, lime juice, or vegan mayo, before serving.

Notes

Dry the Brussels sprouts thoroughly for optimal crispness. Don’t overcrowd the pan. To reheat, use a toaster oven or a skillet for a crunchier texture. Easily adapt the recipe to be vegan or gluten-free with simple swaps, such as maple syrup and coconut aminos.
