  • 4 cups chicken broth
  • 1 cup heavy cream (or milk for a lighter option)
  • 2 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Salt & pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan (for garnish, optional)

 

Instructions

  • Pat the sausage dry, remove from casings, and blot with a paper towel.
  • Dice potatoes into even, bite-sized pieces.
  • Finely chop the onion and mince the garlic.
  • Heat 2 tbsp olive oil in a large pot over medium-high heat.
  • Brown the sausage, breaking it up, and transfer it to a plate with a slotted spoon.
  • Sauté the onion in the sausage drippings until translucent.
  • Add garlic; cook until fragrant (about 30 seconds).
  • Pour in 4 cups chicken broth; scrape to deglaze.
  • Add potatoes, Italian seasoning, red pepper flakes (optional), salt, and pepper.
  • Return the sausage to the pot and bring to a gentle boil.
  • Simmer uncovered for 15–20 minutes, or until the potatoes are tender when pierced with a fork.
  • Reduce the heat and stir in 1 cup of heavy cream or milk.
  • Gently warm for a few minutes without boiling.
  • Taste and adjust seasonings as needed.
  • Let the soup rest 5 minutes before serving.
  • Garnish with grated Parmesan if desired.

 

Notes

For thicker soup, mash some potatoes before adding cream. Use hot Italian sausage for an extra spicy kick, or opt for coconut milk for a dairy-free alternative. Store leftovers in the fridge for up to 4 days or freeze without cream for up to 3 months.
