  • 45 medium Russet or Yukon Gold potatoes, peeled and diced  
  • 6 strips of turkey bacon or beef bacon alternative, chopped  
  • 1 large yellow onion, diced  
  • 3 cloves garlic, minced  
  • 4 cups vegetable or chicken broth (low-sodium)  
  • 1 ¼ cups heavy cream or a dairy-free substitute (like coconut cream)  
  • 2 tablespoons olive oil  
  • Salt and black pepper to taste
  • Optional: Chives or green onions for garnish 

 

Instructions

  • Peel and dice the potatoes, chop the onion and bacon, and mince the garlic.  
  • Crisp bacon alternative in a large pot; remove half and set aside.  
  • Sauté the onion in rendered fat until translucent. 
  • Add garlic and cook for 30 seconds. 
  • Add potatoes and broth, then season with salt and pepper. Simmer for 15 minutes, or until the potatoes are tender enough to be pierced with a fork.  
  • Blend partially or fully to achieve the desired texture.  
  • Stir in the cream and half of the bacon pieces, then simmer for 5 minutes.
  • Serve hot, topped with the reserved bacon and, optionally, green onions or chives.

 

Notes

For a dairy-free version, use coconut or cashew cream. Frozen potatoes can be substituted; simply cook for a longer time. Soup thickens upon standing; add broth if reheating is necessary. Customize with added greens, spices, or swap bacon for mushrooms for a vegetarian option.
